Fried Vermicelli

Ingredients:
  • 1/2 Packet Tops Vemicelli
  • 100 gms. diced vegetables
  • 1/4 cup Olive Oil
  • 3 Eggs
  • 3 tpsp Freshly grated parmesian Cheese
  • Freshly ground pepper
Method:

Cook the Tops Vermicelli in boiling salted water until al dente, when done, drain well and set aside. Chop the vegetables for garnish.

In a large Pan, heat the oil and add the cooked Tops Vermicelli along with the chopped vegetables. Fry over medium heat for eight to ten minutes, or until the Tops Vermicelli is golden and crispy on the bottom side. Beat the eggs lightly, adding the cheese and freshly ground black pepper to taste. Pour the egg mixture over the Tops Vermicelli and cook until the egg mixture is set.

Cover the pan with a plate of the same size and turn the Tops vermicelli onto the plate. Slide the Tops Vermicelli back into the Pan to cook the bottom side for two minutes. Slide onto a warmed serving plate and garnish with the reserved chopped vegetables. Cut into wedges and serve immediately.
